Thai Basil Beef
A fast, savoury ground-beef stir-fry with sweet pepper, garlic, lime, chili, and plenty of fresh basil.

Ingredients
- 1 lb ground beef
- 1 red bell pepper (thinly sliced)
- 1 medium sweet onion (thinly sliced)
- 6 garlic cloves (minced)
- 1 cup fresh basil leaves
- 1 tbsp chili paste
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 2 tbsp lime juice
- 2 tbsp vegetable oil
- 3 cups cooked rice
Method
- Whisk the chili paste, soy sauce, fish sauce, brown sugar, and lime juice in a small bowl; set the sauce aside.
- Heat the oil in a large skillet over medium-high heat. Add the beef and cook for 8–10 minutes, breaking it into small pieces, until browned.
- Add the bell pepper, onion, and garlic. Stir-fry for about 5 minutes, until the vegetables begin to soften but still have some bite.
- Pour in the sauce and add most of the basil. Cook for about 2 minutes, stirring, until the basil wilts and the sauce coats the beef.
- Serve over warm rice and finish with the reserved basil leaves.
